Ingredients

For the Baklava:

  • 250g filo pastry (approximately 1 packet)

For the Syrup:

  • 200g sugar
  • 150ml water

2. Layer the Filo Pastry:

  • On a clean, flat surface, carefully unroll the filo pastry. Keep it covered with a damp tea towel to prevent it from drying out.
  • Brush a baking dish (approximately 33cm x 23cm) with melted butter.
  • Lay one sheet of filo in the dish, brushing it lightly with butter. Repeat this process, layering about 8 sheets of filo, each brushed with butter.
  • Once you have a good base, evenly spread a thin layer of the nut mixture over the pastry.

3. Build the Layers:

  • Continue adding layers of filo, brushing each sheet with butter, and alternating with layers of the nut mixture. Aim for about 4-5 layers of nuts between sheets of pastry.
  • Finish with a top layer of approximately 8 sheets of filo, brushing each sheet with butter as you go.

4. Cut the Baklava:

  • Using a sharp knife, cut the baklava into diamond or square shapes. This will make it easier to serve once baked.

5. Bake:

  • Place the baklava in the preheated oven and bake for around 40-45 minutes or until golden brown and crisp.

6. Prepare the Syrup:

  • While the baklava is baking, make the syrup. In a small saucepan, combine 200g of sugar, 150ml of water, and the lemon juice. Bring to a boil, then reduce the heat and let it simmer for approximately 10 minutes until slightly thickened. If you like, add vanilla extract for extra flavour.
  • Once the syrup is ready, remove it from the heat and let it cool slightly.

7. Combine and Serve:

  • When the baklava is finished baking, immediately pour the syrup over the hot pastry, ensuring it seeps into the cuts.
  • Allow the baklava to cool completely in the baking dish before serving. This will allow the syrup to soak in beautifully, creating that signature sticky and sweet finish.
