Ingredients

To serve 4 people, you will need:

  • 500g of beef fillet or sirloin, cut into thin strips
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 250g of mushrooms, sliced (preferably button or chestnut)
  • 2 tablespoons of plain flour
  • 300ml of beef stock
  • 150ml of sour cream
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of Worcestershire sauce
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 300g of egg noodles or rice (to serve)

Instructions

Step 1: Prepare the Ingredients

Before you start cooking, ensure all your ingredients are prepared. Slice the beef, chop the onion, mince the garlic, and slice the mushrooms. This makes the cooking process much smoother.

Step 2: Cook the Beef

In a large frying pan, heat one tablespoon of olive oil over a medium-high heat. Season the strips of beef with salt and pepper, then add them to the pan. Sear the beef for about 2-3 minutes, or until browned. It’s important not to overcrowd the pan, so if necessary, cook the beef in batches. Once cooked, remove the beef from the pan and set it aside.

Step 3: Sauté Onions and Mushrooms

In the same pan, add the remaining tablespoon of olive oil. Lower the heat to medium, and add the chopped onion. Sauté for about 3-4 minutes, until the onion is translucent. Next, add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are soft.

Step 4: Create the Sauce

Sprinkle the plain flour over the onion and mushroom mixture, stirring well to incorporate and cook out the raw flour for about a minute. Gradually pour in the beef stock, stirring constantly to avoid lumps. Continue stirring until the sauce thickens slightly.

Step 5: Add Flavour

Stir in the Dijon mustard and Worcestershire sauce, ensuring everything is well combined. Return the cooked beef to the pan, along with any juices that may have collected. Allow the mixture to simmer gently for about 5 minutes. Finally, remove the pan from the heat and fold in the sour cream for a rich, creamy finish.

Step 6: Cook the Noodles or Rice

While your Beef Stroganoff simmers, cook the egg noodles or rice according to the packet instructions. Once cooked, drain and set aside.

Step 7: Serve

To serve, plate the noodles or rice, and generously top with the Beef Stroganoff. Garnish with freshly chopped parsley for a pop of colour and flavour.
