• Easy Pineapple Upside-Down Cake Recipe

    Indulge in the delightful charm of a classic Pineapple Upside-Down Cake, a perfect blend of sweetness and buttery richness. This easy recipe will have you conjuring up memories of sunny afternoons and family gatherings in no time.

    Ingredients:

    • 1 can of pineapple rings in juice
    • 75g unsalted butter, softened
    • 150g light brown sugar
    • 200g self-raising flour
    • 2 large eggs
    • 100ml milk
    • A dash of vanilla extract
    • Maraschino cherries (optional)

    Method:

    1. Preheat your oven to 180°C (160°C for fan ovens).
    2. Begin by greasing a round cake tin and lining the bottom with baking parchment. Melt the butter and mix it with the brown sugar until combined. Pour this mixture into the tin, spreading it evenly.
    3. Arrange the pineapple rings on top of the sugar and butter mixture, placing a cherry in the centre of each ring if desired.
    4. In a mixing bowl, combine the flour, eggs, milk, and vanilla extract. Beat until smooth and pour the batter over the pineapples.
    5. Bake in the preheated oven for about 35-40 minutes, or until a skewer inserted into the centre comes out clean.
    6. Allow the cake to cool for a few minutes before inverting it onto a serving plate. Gently lift off the tin and remove the parchment paper, revealing the golden pineapple topping.
