• Instant Pot® Mushroom Risotto Recipe

    Indulge in the creamy delight of Mushroom Risotto, effortlessly prepared in your Instant Pot®. With its rich flavour and velvety texture, this dish is perfect for a cosy dinner or an impressive gathering.

    To begin, gather 300g of Arborio rice, 500ml of vegetable stock, and a selection of fresh mushrooms—such as creminis and shiitakes—to enhance the umami. You’ll also need a small onion, finely chopped, a couple of cloves of garlic, minced, and a splash of white wine for depth of flavour.

    Set your Instant Pot® to the ‘Sauté’ function, adding a drizzle of olive oil and a knob of butter. Once melted, toss in the onions and garlic, cooking until translucent. Add the mushrooms and sauté until they release their moisture and start to brown. Stir in the Arborio rice, ensuring each grain is coated in the buttery mixture, then deglaze with the white wine.

    Pour in the vegetable stock, secure the lid, and set the Instant Pot® to ‘Manual’ for 6 minutes. Once finished, allow for a natural pressure release.
