• How to Make Tonkotsu Ramen at Home (Pressure Cooker)

    Tonkotsu ramen, renowned for its rich and creamy pork broth, can be surprisingly easy to prepare at home with the help of a pressure cooker. Begin by gathering your ingredients: 1kg of pork bones (ideally a mix of trotters and neck bones), 250g of pork belly for added flavour, and a few aromatics including garlic, ginger, and spring onions.

    First, place the pork bones in the pressure cooker and cover them with cold water. Lock the lid and bring it up to pressure, cooking on high for about 40 minutes. This process will extract the maximum flavour from the bones, resulting in a beautifully opaque broth. Once the time is up, release the pressure carefully and remove the bones. Rinse them under cold water to eliminate impurities, then return them to the pot with fresh ingredients.

    Add a few pieces of sliced ginger, smashed garlic cloves, and spring onions, along with water to cover. Seal the lid and cook for an additional 30 minutes under pressure. While the broth is cooking, prepare your pork belly by simmering it in soy sauce, mirin, and a touch of sugar until it's tender and infused with flavour.

    After the second cooking phase, strain the broth to remove the solids, and adjust the seasoning with soy sauce and salt to taste. For a finishing touch, cook your ramen noodles according to package instructions. Serve the noodles in a bowl, ladle in the steaming broth, and top with slices of your seasoned pork belly, a soft-boiled egg, and a sprinkling of sliced spring onions.
