Beef Stroganoff is a timeless classic that epitomises comfort food, perfect for a hearty family meal. This traditional recipe celebrates tender strips of beef, lovingly sautéed and enveloped in a rich, creamy sauce.

    Ingredients:

    • 500g beef fillet, thinly sliced
    • 2 tablespoons plain flour
    • 2 tablespoons butter
    • 1 medium onion, finely chopped
    • 250g button mushrooms, sliced
    • 2 cloves garlic, minced
    • 1 teaspoon Dijon mustard
    • 300ml beef stock
    • 150ml sour cream
    • Salt and freshly ground black pepper
    • Fresh parsley, chopped (for garnish)
    • Cooked egg noodles or rice, to serve

    Method:

    1. Begin by lightly coating the beef slices in flour, seasoning with salt and pepper. This will help to thicken the sauce later on.
    2. In a large frying pan, melt the butter over medium heat. Add the beef in batches, searing it until browned but still tender. Remove from the pan and set aside.
    3. In the same pan, add the chopped onion and sliced mushrooms. Sauté for about five minutes until the onions become translucent and the mushrooms are golden.
    4. Stir in the minced garlic and cook for an additional minute. Then, add the Dijon mustard and beef stock, stirring to combine.
    5. Return the beef to the pan, letting it simmer gently for about 10 minutes. Remove from heat and stir in the sour cream until the sauce is smooth and creamy.
    6. Adjust seasoning to taste, then serve over a bed of cooked egg noodles or rice, garnished with freshly chopped parsley.
