  • A pinch of salt

For the Salted Caramel Sauce:

  • 200g granulated sugar
  • 90ml water
  • 200ml double cream, warmed
  • 50g unsalted butter, diced
  • 1 tsp sea salt, or to taste

Instructions

Step 1: Prepare the Base

  1. Preheat the Oven: Start by preheating your oven to 180°C (160°C for fan ovens), gas mark 4.

  2. Make the Base: In a mixing bowl, combine the crushed digestive biscuits and melted butter. Mix until the biscuits are evenly coated.

  3. Press Into the Tin: Transfer the biscuit mixture to a 23cm (9-inch) springform cake tin. Press it down firmly to create an even base. Use the back of a spoon or a flat-bottomed glass for an even layer.

  4. Bake: Place the base in the preheated oven for 10-12 minutes, until slightly golden. Remove from the oven and allow to cool.

Step 2: Make the Cheesecake Filling

  1. Beat the Cream Cheese: In a large mixing bowl, beat the cream cheese with an electric mixer until smooth.

  2. Add Sugar and Eggs: Gradually add the caster sugar, mixing until well combined. Add the eggs one at a time, mixing well after each addition to ensure a smooth batter.

  3. Chill: Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.

Step 4: Prepare the Salted Caramel Sauce

  1. Make the Caramel: In a medium saucepan, combine the granulated sugar and water over medium heat. Stir gently until the sugar dissolves.

  2. Let it Caramelise: Once dissolved, stop stirring and allow the mixture to bubble away until it turns an amber colour. Watch carefully to prevent burning.

  3. Add Double Cream and Butter: Remove from heat and carefully whisk in the warmed double cream (it will bubble vigorously). Add the diced butter and sea salt, stirring until smooth. Taste and adjust the salt to your preference.

  4. Cool the Caramel: Allow the caramel sauce to cool until it thickens slightly but is still pourable.

Step 5: Assemble and Serve

Once the cheesecake has set and the caramel has cooled, pour the salted caramel sauce generously over the top of the cheesecake. You can reserve some to drizzle over individual slices when serving.
