To serve approximately 4 people, you will need:

For the Biryani:

  • 300g basmati rice
  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon ginger paste
  • 2 green chillies, slit (adjust to taste)
  • 1 cup mixed vegetables (carrots, peas, beans, and potatoes)
  • 1 large tomato, chopped
  • 2 teaspoons biryani masala (or a combination of cumin, coriander, and garam masala)
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander, chopped (for garnish)
  • Fresh mint leaves, chopped (for garnish)

For the Rice:

  • 4 cups water
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 bay leaf
  • 1 stick of cinnamon

Preparation Steps

1. Soak the Rice:
Start by washing the basmati rice thoroughly under cold running water until the water runs clear to remove excess starch. Soak the rice in water for at least 30 minutes; this helps achieve the perfect fluffy texture.

2. Prepare the Spices:
While the rice soaks, gather your whole spices. Crushing them slightly will release their essential oils, enhancing the flavour profile of your dish.

3. Sauté the Aromatics:
