For the Rice:

  • 1.5 cups basmati rice
  • 2.5 cups water
  • 1 bay leaf
  • 2 green cardamom pods

  • 1 green chilli, slit (adjust to taste)
  • 1 cup mixed vegetables (carrots, peas, green beans, or any seasonal vegetables)
  • 1 medium tomato, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • Fresh coriander and mint leaves, for garnish

Method

1. Prepare the Rice

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak the rice in water for about 30 minutes, then drain.
  2. In a large pot, bring 2.5 cups of water to a boil. Add the soaked rice, bay leaf, cardamom pods, cloves, cinnamon stick, and salt. Cook until the rice is 70% cooked (it should still have a slight bite)—this usually takes about 5-7 minutes. Drain the rice and set aside.

2. Cook the Vegetables

  1. In the same pot, heat the vegetable oil or ghee over medium heat. Add the sliced onions and sauté until they turn golden brown.
  2. Add the minced garlic, ginger, and green chilli. Sauté for a minute until fragrant.
  3. Stir in the cumin seeds, chopped tomatoes, and the mixed vegetables. Cook for about 5-7 minutes, or until the vegetables are slightly tender.
  4. Add the coriander powder, turmeric powder, and salt. Mix well, and let it cook for another 2-3 minutes.
  5. Once the vegetables are cooked through, sprinkle in the garam masala and mix well. Remove from heat.

3. Layer the Biryani

  1. In the pot with the vegetable mixture, evenly layer the partially cooked rice on top of the vegetables. Do not stir; instead, fluff the rice gently with a fork.
  2. Cover the pot with a tight-fitting lid. Reduce the heat to low and allow it to cook for another 20 minutes. This step allows the steam to finish cooking the rice and infuses it with the flavours of the spices and vegetables.

4. Serve

Once the cooking time is up, remove the pot from the heat. Let it sit for 5 minutes before unearthing the layers. Gently fluff the biryani and garnish with fresh coriander and mint leaves.
